Let them reach room temperature.
Add the lamb to the hot skillet and cook until medium rare 4 to 5 minutes per side. Cook chops for 3 to 4 minutes per side. When the lamb chops are ready transfer them to a rimmed broiler safe baking sheet. Remove the chops from the fridge 30 minutes before cooking to bring them to room temperature.
Rub with oil and season with salt before covering with foil. Place in the oven and cook for 4 hours until the meat is tender and comes away from the bone. Don t use any oil as the fat in the chops will be enough to cook them without burning. Let chops sit 2 hours or more covered in refriegerator turning once or twice during this time.
Preheat your grill or heat oil in a frying pan to a high heat. Season the chops and either fry or grill for 4 5 minutes on each side for medium rare or 6 7 minutes for medium. Lamb shoulder chops are one of the most inexpensive cuts of lamb and slow cooking them is the best way to get that nice lamb flavor. Loosely cover with foil and rest for ten minutes before serving.
