Brie is a soft young cheese usually made from cow s milk. Don t try scraping out the inside to avoid the rind. Many people consider it the tastier part of brie. Brie rind is edible and complements the creamy cheese inside.
If you are really not interested in eating the rind then you may remove it on your own plate or into a napkin. If you re talking about a bloomy rind a washed rind a goat cheese or a blue cheese absolutely eat the rind. Slicing off just the top leaves a bowl for the creamy cheese to be scooped from when eating or preparing to serve. It would be a huge mess and enormous waste of time to remove the rind from a wheel of brie.
Unlike other rinds the white moldy brie rind is edible and is usually eaten along with the softer interior. They are full of flavor. We like to say that all rinds are edible but not all are palatable. Some people find the skin rather bland and don t eat it.

Place the brie on a cutting board and use a serrated knife to slice the top off of the brie. That would be like taking the meat out of a sandwich and throwing away the bread. Never cut a piece of brie from a block in public detaching the soft cheese from the rind. If you re trying brie for the first time definitely bake it.
Eat the rind along with the rest of the cheese. Definitely eat the rind. Because it s 2018 and we as a society have not yet figured out that it is 100 ok to eat the rind on the brie cheese. But it s not just that it s safe or acceptable to eat the rind on brie.
Everyone wonders what they are supposed to do with that hard shell on cheese but a brie rind is safe to eat. Rich in flavor brie is best when served at room temperature on hot fresh french bread. If you do not want to eat the rind it is easy to trim from a refrigerated brie or bring the cheese to room temperature slice off the top and scoop out the soft center with a spoon. Slice off the top.
