Well you can freeze corn without blanching first but it s not as clear cut as green beans or snap peas. Have no clue how i learned to do it this way but i have been putting it up for over 40 years. I actually found i like to have corn on hand that s been frozen three different ways. How long does frozen corn keep in the freezer.
Blanching the corn preserves its flavor and texture and it will kill any germs that are potentially on the corn kernels. If you were wondering if you can freeze corn without blanching the answer is yes. After blanching pat the vegetables dry with a towel then arrange them in a single layer on a baking sheet just as you would when freezing fruit before putting them in the freezer to freeze solid. When freezing corn kernels make sure you allow enough space for the kernels to breathe.
The caveat to all of this is that you do. Place the blanched vegetables into freezer bags or containers and place in the freezer. Repeat the process until all of your corn is blanched and cooled. Not to mention if you re cutting it off the cob blanching helps make it a little easier to cut off of the cob.

Well they say yes the famous they we are always hearing about that you can just stick an ear of raw shucked corn in a plastic bag and shove it into the freezer and it ll be fine whenever. Freezing vegetables without blanching them first results in faded or dulled coloring as well as off flavors and textures.
